The wort has to boil for an hour, and you want the pot as full as possible, so you don't have to add much water back. Inevitably, a full pot that boils for an hour always boils over. I guess the more beers you make, the less you boil over. Our boil over went unnoticed, but later a guy next to us boiled over, and everyone gathered around to give him a hard time.

A boilover ensures that you get a good hot-break and your proteins form and settle to the bottom. C'mon folks, it is elementary!
